it can be concluded that microcapsules (WPI + FOS) represent an effective and promising method to maintain the survival of viable probiotics bacteria and their safe delivery into the gut. The supplementation of the banana powder with (WPI–FOS) microcapsules did not alter its sensory qualities, suggesting its use as a potential probiotic food carrier. In vivo, clinical studies are required to further investigate the potential health attributes of (WPI–FOS) microcapsules to consumers.
